Dark Chocolate Pumpkin Bliss Bites


These Dark Chocolate Pumpkin Bliss Bites are the perfect fall treat that everyone will love! They're the perfect snack for when you're needing a little energy boost, or to satisfy your sweet tooth. They freeze really well, and are perfect for making ahead for a new week! These Bliss Bites are packed full of healthy fats, organic oats, and have the perfect hint of fall in them! Dark Chocolate Pumpkin Bliss Bites

  • 1 1/2 Cups of Organic Quick Oats

  • 1/2 Cup of Organic Pumpkin Puree

  • 1/2 Cup of Natural Almond Butter

  • 1/3 Cup Apple Honey (or Regular Honey)

  • 3 Tablespoons of Organic Molasses

  • 1/2 teaspoon Cinnamon

  • 3/4 teaspoon Pumpkin Pie Spice

  • 1 teaspoon Vanilla Extract

  • 3 Tablespoons Ground Flax Seed

  • 1 Scoop of Vegan Vanilla protein powder (Optional)

  • 1/4 cup Mini Dark chocolate chips (I like Lilly's Dark Chocolate Chips)

Directions:

  1. In a large bowl or stand mixer, combine all the ingredients

  2. If you're using a large bowl, mix the batter together with an electric hand mixer or your hands until combined.

  3. If batter seems too wet still, add more Ground Flax Powder until you can form the batter into balls

  4. Using a small cookie scoop, scoop batter & roll into balls

  5. You can package these and store at room temperature for approx. 4 days, or freeze them and enjoy as you please for us to 2 weeks!


I love to enjoy these as a mid-morning pick me up, or when I'm really craving something sweet.
