The Easiest Fluffy Vegan Pancakes


These Vegan Pancakes are my absolute favorite thing to make on a slow Sunday morning! They're fluffy, slightly sweet with a hint of Cinnamon and my favorite part is that they cook up so quickly!! No one has to wait around to flip Pancakes all morning, and you'll feel LIGHT & ENERGIZED after enjoying them!! I'm so happy to share this recipe with ya'll. Add some Organic All-Natural Maple Syrup & Homemade Vegan Butter and enjoy with the entire family!


***These also freeze VERY well, so package some up, heat and enjoy them as your weekday High Vibe Morning Delight!


The Easiest Fluffy Vegan Pancakes


Makes about 16 small-medium Pancakes


INGREDIENTS

  • 2 Cups of Gluten Free All Purpose Flour

  • 2 Tablespoons Coconut Sugar

  • 2 Tablespoons Baking Powder

  • 1/2 teaspoon Salt

  • 2 teaspoons of Cinnamon

  • 2 teaspoons of Vanilla Extract

  • 1 Cup Organic Almond Milk

  • 2 Tablespoons melted Coconut Oil

  • Vegetable or coconut oil, for frying


DIRECTIONS:

  1. In a large bowl, sift together all the dry ingredients

  2. In a separate bowl, mix together all the wet ingredients

  3. Combine the wet ingredients into the dry ingredients

  4. With a rubber spatula, GENTLY fold together the Pancake batter

  5. Heat your pan to medium-low heat, and grease with Coconut Oil

  6. Fry Pancakes for 30 seconds each side until Golden Brown

  7. Drizzle with Organic Maple Syrup, or Vegan Butter substitute and ENJOY!
